bits of this and that {january 6, 2022}

Six days into 2022 and I haven't taken a trip to the grocery store. Over the holidays, the house was filled with nine people and prior to their arrival many, many shopping outings were made to fill the fridge with food to feed this army. Once the gang departed, even after taking food with them, T and I were left with lots and lots of leftovers.

What to do when the leftovers get down to the scrap stage, when there's enough to make a meal for one but you just don't want to eat another bite of beef or turkey but there's too much to throw away? And with the prices of meat, none of that is getting tossed. A small pot of beef/turkey/barley soup empties the fridge of the leftover meat.

My family loves vegetables and the veggie bin still held a zucchini, a couple carrots, a red pepper, a parsnip, half of an eggplant, a handful of cherry tomatoes, half a box of shitake mushrooms, and a carton of spinach. I also had some ricotta and feta cheeses and a leftover blop of spinach artichoke dip. All of this turned into a couple veggie tarts, which, by the way, make really good leftovers 😁
