locust leaves {october 6, 2021}

It’s a gray, overcast, little bit rainy Wednesday.

The locust leaves are falling like crazy. It’s such a messy tree in the fall. Lots of locust trees line the streets and fill the yards in our neighborhood. Locusts are a fast-growing tree and it looks like they were planted as the houses were built 30+ years ago. The planners of the subdivision wanted to have a neighborhood filled with large trees ASAP. The little golden leaves drag into the house and it’s a daily sweep to clean them up.



’Tis the season for pumpkin spice everything. The pumpkin spice popcorn display is the eye catcher at the Giant Eagle today.



Oriental Chicken Salad for dinner…a good ole reliable favorite when I don’t know what’s for dinner and need something that is quick, healthy, and yummy. 


Oriental Chicken Salad


6 grilled chicken thighs

1 large head of Romaine lettuce, cut into bite-sized pieces

1 bunch green onions, sliced

2 celery stalks, chopped

2 carrots, peeled and chopped

1/2 c. slivered, toasted almonds


Dressing

2 T. sugar

1 t. salt

1/2 t. pepper

1/3 c. gourmet rice wine vinegar

1/2 c. canola oil


Combine salad ingredients. Toss with dressing just before serving.
