A proper Chicago dog is an all-beef frankfurter (such as Vienna Beef) in a poppy seed bun, topped with yellow mustard, neon-green sweet pickle relish, chopped white onion, tomato slices, a dill pickle spear, pickled sport peppers and celery salt. It’s often described as “dragged through the garden” — referring to all of the vegetable toppings. If you're buying a dog from a vendor and ask for ketchup, that immediately tags you as an outsider. No ketchup on Chicago dogs. Big, big, BIG NO! Many times vendors won't have ketchup at their stands.
The rooftop bar at the Lincoln Hotel, J. Parker, has made the Chicago dog into a fun appetizer, Chicago corn dogs. The batter has poppy seeds in it and it's served with mustard, that obnoxious green relish, and the Chicago sport peppers. No ketchup allowed!
